Hate even mentioning this topic, but as the saying goes, you definitely are, what you eat! So eat wisely!
No, nuts do not lose their heart-healthy monounsaturated fat during the roasting process. However, roasting may alter and damage the polyunsaturated fats that nuts also contain and that are more vulnerable to oxidation.
He said he was recently given a clean bill of health and that his cholesterol is low.
I’m gonna call BS on that one.
Dr William Li said that you can get Antioxidants in a pill form, but it is best to get them naturally in the foods that you eat. He said that studies have also shown that Organic foods have more antioxidants because they produce more in order to protect themselves naturally since there are no pesticides to help them out.

The good news here is that this was a first-rate study done by highly respected researchers. It also suggests a new area of research to learn if the increase in brain glucose metabolism seen could be harmful. (It is also possible that the brain activity could be beneficial.)
